One handed perks are very limited though. The only one handed perks you really need are the Bladesman and standing power attack one. Sword and Shield is more dangerous than 2H in the long run though. A normal shield bash can stun a dragon quite a bit, power bashing can disarm even Druagr Deathlords, and Shield Charging knocks over the fleeing.

Well left click you swing your sword, dagger, axe, ect. and right click holds up your shield. All you do is hold up your shield when someone is attacking you and swing your weapon to fight back, sorry it's not rocket science. Block their attacks or bash them with your shield to stagger them and then have at it until they regain their balance.
